Perle Vintage
The first Perle released was the
2001 vintage. The new release is
the Yellowglen Vintage Perle 2005,
a wine with great intensity of
flavour. Being predominantly Pinot
Noir based, this wine displays
complex bread and yeast
characters both on the nose and on
the palate. A delicious description
as a gorgeous amalgam of toasty,
biscuit mix notes lifted by red berry
fruit aromas. Mmmmm.

Seppelt Salinger

Sweet Celebration
ingredientS
12 eggs, separated / 6 cups milk
2 cups thickened cream
2 cups bourbon / 1½ cups sugar
¾ cup brandy / 2 tsp nutmeg
method
Beat the yolks and the sugar until Firm.
Slowly add in the bourbon and brandy.
Cool in the fridge for up to 6 hours. 30
mins before serving, stir in the milk
and the ground nutmeg. In a separate
bowl, beat the cream on high. In
another bowl, beat the egg whites
until stiff peaks form. Fold the egg
white mixture into the yolk mixture.
Fold the cream into the egg mixture.
Ladle into cups. Garnish with nutmeg.

he silly season is well and truly upon us. Christmas par-
ties are aplenty, and plans for New Years Eve have been
cemented. This is the time of year that all your senses
get a workout, not least of which are your sense of fun, but also
your taste buds for celebratory drinks and sweet delights.
Being huge advocates of celebrating whenever you get
the chance, we're encouraging you to indulge a little this
season. Dip strawberries in two types of chocolate, give our
decedent eggnog recipe a try, eat prawns and oysters with
frivolous abandon, open your favourite brand of bubbly
and celebrate with friends. Leave the guilt about calories or
carbs behind for a few weeks and truly let your senses take
